Food, Metabolism & Microbiology

The Food, Metabolism & Microbiology Section, through knowledge and intellectual property in biotechnology-based food and nutrition, will capture opportunities for the pastoral sector from functional, genomics-led discovery. This will subsequently lead to the creation of new food products and processes that meet consumer expectations for health and wellbeing, and command premiums because of their functional and processing properties. This Section also includes AgResearch MIRINZ-based teams focused on ensuring quality, consistency, and safety of meat products. The Sections' focus areas are Food Safety, Food Engineering, Microbiology, Meat Science, and Nutrition and Metabolism. These operate throughout the entire pastoral sector value-adding chain from farm to fork, pasture to plate, grass to glass.

Dairy Science & Technology

The Dairy Science & Technology Section focuses on adding value to the pastoral sector and, in particular, the dairy sector by partnering with industry to discover, isolate and characterise novel bioactives from milk, animal tissues and other sources and turning these into high-value market-ready products and optimising operations on-farm and in-plant through novel non-invasive measurement applications.

Key science capabilities underpinning this strategy are in functional genomics, proteomics, mammary biology, (innate) immunology, bioprocessing, toxicology and non-invasive measurement technologies including X-rays, UV, NIR, ultrasound, imaging and biosensors.
